At NOMADA, we combine Italian tradition with the gastronomic identity of the Marina Alta region. From Dénia, a UNESCO Creative City of Gastronomy, we transform local ingredients into contemporary dishes that express flavor, territory, and seasonality.

HEAD CHEF

MAURO GULLÌ

Chef Mauro grew up in Calabria, in southern Italy, and earned a master's degree in electronic engineering before pursuing his true passion: cooking. His culinary career has taken him all over the world, working in cities such as Bari (Italy), Dublin, Adelaide (in a restaurant ranked among the 50 best in Australia in 2014) and Singapore, before joining Nomada in 2021.

Mauro's cuisine combines modern Italian regional dishes with Mediterranean flavours, always respecting local and seasonal ingredients.

"I believe in fresh, local, and seasonal produce—but most importantly, in homemade. I strive to create as much as possible in my kitchen, from pasta and cold cuts to ice cream. Above all, I believe in my team."
